  • Ripe mango: Use sweet and juicy mangoes for a better flavor. You can also use green mangoes if you prefer a more acidic chutney.

  • Sal: Enhances flavors and balances sweetness.

  • Garam masala: The blend of Indian spices that gives it its characteristic flavor.

Mango Chutney Recipe

Ingredients

  • 1 kg of mango (ripe, diced small)
  • 20 grs of fresh ginger (grated)
  • 1 cup of sugar (preferably brown)
  • 1 teaspoon of salt
  • 15 grains of black pepper
  • ½ cup of white vinegar
  • 1 tablespoon of garam masala
  • 1 branch of cinnamon
  • 1 red chili

Instructions

  1. Chop the mango into small cubes, grate the ginger and cut the red chili into fine pieces.
  2. In a frying pan with a little vegetable oilskip the garlic, ginger and red chilies for 1 minute.
  3. Add the spices and sauté for 1 more minute to release its aromas.
  4. Incorporates the mangoes, sugar, salt and vinegarMix all the ingredients well. Cook over medium heat.
  5. When it comes to a boil, reduce the heat to low and simmer, stirring occasionally, until it acquires a thick jam.
  6. Remove from heat, pulls out the cinnamon stick and let it cool before storing it in a glass jar.
