The yogurt must be cold for the recipe to be perfect.<\/li>\n\n\n\n<li><strong>Water:<\/strong>always very cold<\/li>\n\n\n\n<li><strong>Cumin:<\/strong>I like to use the seeds, toast them in a frying pan to enhance their flavor and then grind them in a mortar and pestle.<\/li>\n\n\n\n<li><strong>Pepper<\/strong>&nbsp;<strong>black<\/strong>: always freshly ground for maximum flavor<\/li>\n\n\n\n<li><strong>Chaat masala:<\/strong>A mixture of spices that usually contains cumin, coriander seeds, black pepper, black salt, mango powder and asafoetida. If you do not want to prepare it at home, you can buy the mixture.&nbsp;<a href=\"https:\/\/amzn.to\/3EFRao8\" target=\"_blank\" data-type=\"link\" data-id=\"https:\/\/amzn.to\/3EFRao8\" rel=\"noreferrer noopener\">chaat masala&nbsp;<\/a>already prepared.<\/li>\n\n\n\n<li><strong>Salt:<\/strong>I always use Himalayan salt. I particularly like the<em>chass masala<\/em>&nbsp;with black salt although it is a somewhat difficult taste for the western palate due to its sulfurous taste and intensity.<\/li>\n\n\n\n<li><strong>Fresh cilantro<\/strong>: use only the leaves<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Variants of&nbsp;<em>chaas<\/em>&nbsp;,&nbsp;<em>buttermilk<\/em>&nbsp;spicy<\/h2>\n\n\n\n<p>I think like everything you eat in India,&nbsp;<strong>you will never find two&nbsp;<em>chaas<\/em>&nbsp;equals<\/strong>. Freshly roasted spices can be added, such as cumin (the star spice for the&nbsp;<em>buttermilk),<\/em>&nbsp;ginger, pepper, successful spice blends such as ginger, pepper, and <em>chaat masala<\/em>cilantro, mint, fresh chili, curry leaves,&nbsp;<a href=\"https:\/\/amzn.to\/4hTP6ag\" target=\"_blank\" rel=\"noreferrer noopener\">black salt&nbsp;<\/a>(<em>kala<\/em>&nbsp;<em>namak<\/em>) with its particular sulfurous and intense flavor...&nbsp;<\/p>\n\n\n\n<p>There is a version of&nbsp;<strong>c<em>haas<\/em>&nbsp;smoked<\/strong>&nbsp;which is delicious (I tried it by chance on my last trip to India and I am counting the days to repeat).&nbsp;<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">What utensils do I need to make this recipe?<\/h2>\n\n\n\n<p>You can do it with&nbsp;<strong>electric mixer<\/strong>&nbsp;,&nbsp;<strong>or beat it by hand<\/strong>, for this second option you need a bowl and a hand mixer. You also need a frying pan to toast the seeds and a mortar to grind them.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Chaas Masala Recipe<\/h2>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>200 grs cold yogurt<\/li>\n\n\n\n<li>\u00bc teaspoon cumin powder<\/li>\n\n\n\n<li>\u00bc teaspoon freshly ground black pepper<\/li>\n\n\n\n<li>\u00bc teaspoon chaat masala<\/li>\n\n\n\n<li>1 pinch salt or black salt<\/li>\n\n\n\n<li>1 tablespoon chopped fresh cilantro<\/li>\n\n\n\n<li>300 ml very cold water<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Instructions<\/h2>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Add all the ingredients in a bowl.<\/li>\n\n\n\n<li>Whisk all the ingredients until the mixture is homogeneous.<\/li>\n\n\n\n<li>Add water and whisk. The amount of water is to taste depending on whether you want the drink lighter or thicker (note that the consistency of the buttermilk should be more diluted than the lassi).<\/li>\n\n\n\n<li>You can add a splash of lemon juice (this ingredient is optional).<\/li>\n\n\n\n<li>Whisk until the mixture is frothy.<\/li>\n\n\n\n<li>Serve and sprinkle with chaat masala, toasted cumin and coriander.<\/li>\n<\/ol>\n\n\n\n<h2 class=\"wp-block-heading\">With what can I take the&nbsp;<em>chaas<\/em>&nbsp;,&nbsp;<em>buttermilk<\/em>&nbsp;spicy?<\/h2>\n\n\n\n<p>This drink can be taken&nbsp;<strong>to accompany your Indian food<\/strong>&nbsp;and thus refresh yourself and counteract the effect of the spiciness (surely the food is spicy hehehehe),<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Frequently Asked Questions<\/h2>\n\n\n\n<h3 class=\"wp-block-heading\">The same&nbsp;<em>chaas<\/em>&nbsp;(Hindi term) and&nbsp;<em>buttermilk?<\/em><\/h3>\n\n\n\n<p>No, it is not the same thing. You only need 250 ml of milk and 1 tablespoon of lemon juice or vinegar (white or apple). Mix it and let it stand for 10 minutes.
